As you all know – I (Emily) am NOT a Halloween person. I don’t like bats, spiders, or ghouls and goblins. I also don’t love the idea of kids running around in the dark – sans parents – and getting into mischief. I also will never get over the fact that we tell our kids – legitimately their whole lives – not to take candy from strangers, but then we throw that all out the door on Halloween. I digress. Despite all f that … there ARE amazing parts to Halloween. Getting together with friends. All things fall. Adorable toddlers in fuzzy Halloween costumes. EVERYTHING PUMPKIN. Which brings me to this post.

I have resolved that no matter how I feel about Halloween, to focus on the positives and enjoy it for/with my kids. I decided we would decorate the house for a “muffin” decorating Halloween bash. Ash helped me set everything up… and it was obviously a huge hit. Our 4 Ingredient Pumpkin Spice Muffins were the stars… and the decorations were the icing on the proverbial “cupcake muffins”.
I don’t really know what to call these. Muffin sounds healthier than cupcake? But here’s the deal – we’re not kidding anyone – these aren’t the healthiest muffin/cupcakes in the world. But they are the most delicious. AND in my busy Mom life… they are also the easiest. They literally take 5 seconds to stir together. The scooping into the muffin tins is the most arduous part of all. If you’re really short on time, you can throw this mixture in a loaf pan. It’s just as great as a bread. Either way… you will definitely win brownie points – or muffin points – with the kids and teachers if you bring these to your kids’ school. If you don’t have kids… these are a surefire way to make all your coworkers’ days! They are DELICIOUS.
What’s more… they’re cheap, easy, and quick. ALL wins in my book!
Thankfully no matter what day it is – Halloween, game day, Thanksgiving, Christmas, or even any random Monday – Walmart always has me covered. I LOVE that it is right down the street from my house, and with their new curbside pickup, shopping has never been easier. They also have THE most amazing in store pickup system now. You just scan your receipt at the tower in store and your order appears. It is legitimately like Halloween magic.
For this specific party I actually shopped the old fashioned way and had SO much fun perusing the isles and picking out the best of the best of Halloween Decor. As you know, I got a little bit distracted in the women’s section and picked up a bunch of AMAZING under $20 sweaters, and then I also picked up a bunch of fun fall decor as well. I guess what I really love about Walmart lately is that I can do all my shopping all in one place. From clothes, to food, to decor, to party supplies – Walmart is a one stop shop.

If you haven’t been into your local Walmart lately – I urge you to check it out. I cannot believe how often I have been visiting mine. I also CANNOT believe how much money I am saving. The same trips to other big box stores – or even my local grocery store would be double the price. They have amazing prices on literally everything.
OK… now to the stars of the show… our 4 Ingredient Pumpkin Spice Muffins.
Shop 4 Ingredient Pumpkin Spice Muffins:
Ingredients:
- 1 box spice cake mix
- 1 15oz can of pumpkin
- 1/2 bag semi sweet chocolate chips – if you use a full bag – you may have to cook longer!
- 1/4 cup water
Directions:
- Preheat oven to 350 degrees
- Mix all ingredients together
- Line muffin tins with cupcake foils – fill 3/4 of the way with cupcake batter
- Bake at 350 degrees for 25 min
- Enjoy!
- ***Do not follow ingredients/recipe on the cake mix box. All you need are the ingredients in this recipe***
- ***We frost ours because it is fun for the kids… but these cupcake/muffins really don’t need it**
