I don’t know about you, but I just love the Fourth of July. There’s something about celebrating the amazing country we live in, that really, really makes my heart happy. I couldn’t let you go into this holiday weekend without a good recipe – and this red, white and blue cake is perfect for any BBQ or summer party you’re headed to. Add in a bottle of Rosé and you’re good to go!
So here’s the deal – you can use any cake mix you choose. I made this healthy version for William’s first birthday (that’s where the photo above is from). It’s not the best tasting – but it’s perfect for your 1 year old – not too much sugar!
When it comes to the layers, you have to have some imagination… and really… I say just use what you have in your kitchen! I used one round cake pan and two different sized ramekins to make the layers you see above. Then I made my signature cream cheese frosting… literally just: cream cheese, butter, powdered sugar and vanilla… and then I arranged the berries as you see above. Top it with a sprig of mint, and you’re good to go!
