Heidihos – Emily’s Mom’s 5 Ingredient Blondies

Emily’s Mom’s Heidihos: 

My mom has been making these Heidihos since she was 18 years old… so almost 50 years now. She made them my whole childhood and to this day it is the recipe all my friends ask her for. She has never given it to anyone. Until now.

She has hoarded this recipe for 50 years and swore my sister and I to secrecy when she gave it to us in a recipe box a couple years ago. Well, we figured if there was ever a time that the world needed the best blondies known to man, it was now. I hope you love these Heidihos as much as I have loved them my entire life. FYI: my mom’s license plate says HEIDIHO – that’s just how much she loves them – and the nickname. 🙂

Ingredients:

  • 1 3/4 sticks unsalted butter (14 tbs) softened at room temp
  • 2 1/4 cups firmly packed dark brown sugar
  • Three eggs
  • 2 1/4 cup all purpose flour
  • 1 bag semi sweet chocolate morsels (12 oz)
  • Optional 1 cup chopped pecans or walnuts… My mom prefers pecans

Directions:

  • Preheat oven to 375
  • Grease a 13 x 9″ Pyrex baking pan
  • In a  mixer or using a hand-mixer gently cream together the butter and the sugar
  • Add in the eggs, gently mix
  • Slowly add in the flour, mix together
  • Pour in the chocolate chips (and nuts if wanted) and mix together with a spatula
  • Fold HEIDIHO batter into the pre-greased Pyrex pan
  • Place in preheated oven (middle rack)
  • Cook at 375 for 29 minutes
  • Oven temperatures and cook time may vary
  • Remove from the oven, let cool
  • Slice with a butter knife and serve with vanilla bean ice cream
  • Enjoy
