Happy National Chocolate Chip Cookie Day!

If you needed an excuse to enjoy an amazing chocolate chip cookie – well today is the day. Literally. Today, we’re throwing it back to a post that so many of you loved – it’s Emily’s favorite chocolate chip cookie recipe. She made them right before she had William to bring them to her nurses in the hospital, and as usual, they were a hit! We hope you enjoy this post… and we hope you make a batch of your own! XooX.

We’ve all had them… You know what I’m talking about.

They’re the ones that keep you coming back for more. The ones that you dream about. The ones that you spend your entire adult life trying to find a recipe for, that… maybe… even kind of… compares.

They’re the biggest, fluffiest. tastiest, chocolate chip cookies… in the world. 

For me, I had these “said cookies” when I was in high school, and anyone who went to school with me knows the cookies I’m talking about.

Cough cough… Katie Trainor’s famous chocolate chip cookies.

Anyhow, yes, I have spent most of my adult life trying to find a cookie recipe that even comes close to hers. Sad, but true. They were the perfect cookies.

In this post here, I told you that I was planning on bringing cookies to our labor and delivery nurses. So in the spirit of nesting, and being uber prepared,  I set out to make the cookie dough for the perfect chocolate chip cookies, like the ones I had in high schoolMy plan was to make the dough, and then to freeze it in rounds that could be baked at a moment’s notice… once I do actually go into labor.

So dear friends, I spent Saturday morning making these cookies. The only issue is that hardly any of the dough got frozen because I baked most of them and then… they disappeared. :/ #pregnancyproblems

OH MY LAWDDD… they are amazing. I can take NO credit for this recipe, other than the hour I spent on Pinterest searching for it. But – let me tell you now, these cookies are to die for. Be careful. They are far from good for you, they are far from organic, but if you want a show stopper, fluffy, chocolate chip cookie recipe – see below!

As for my outfit… at 38 weeks, I’m a big fan of anything that is comfortable. So on Saturday morning, that consisted of my bathrobe and nightgown. Since it is finally spring, we’re loving everything floral, and this Plum Pretty Sugar robe is no exception.

The Best Chocolate Chip Cookies… In The World

Ingredients:
3/4 cup sugar
3/4 cup brown sugar – I used light brown sugar
1/2 cup butter – at room temp – let it sit out for at least 2-3 hours
1/2 cup butter flavored crisco
2 eggs
1 tsp vanilla – I added a little more 🙂
1 (3.4oz) package of INSTANT vanilla pudding – such a random ingredient… right? Anyhow, make sure it is the instant kind – or you’ve got problems!!!
1/2tsp salt (I think I’ll omit this next time)
1 tbsp baking soda
3 cups of flour
12 oz semi-sweet chocolate chips

Directions:

Preheat your oven to 350 degrees.

In a large mixing bowl combine: sugars, butter and crisco and beat together. Next beat in the eggs and vanilla extract. Now add in the vanilla pudding mix and incorporate.

In another bowl, combine the flour and baking soda. Once combined, add the flour mixture to your egg, sugar and butter mixture.

Add in chocolate chips and stir gently.

Roll into large balls and place on a cookie sheet.

Place in preheated oven and cook for just 10 min. No longer! Let cool on a cooling rack.

Try… just try… not to eat them all!
